Did I mention that it is super simple?
1 cup shredded coconut, unsweetened
3 tablespoons raw coconut oil (raw has both a stronger flavor and more benefits)
1/4 cup pure maple syrup (or equal parts water and stevia)
1/4 teaspoon pink salt OR sea salt
1/4 teaspoon vanilla extract
1/2 teaspoon lemon extract (use more or less)
OPTIONAL: Thinly sliced toasted almonds

- Process all the ingredients in a food processor
- Roll into balls or press into bars
- If you want, press an almond into the tops for looks and crunch
- Chill for one hour
- Enjoy straight from the fridge
