This filling power breakfast is paleo, vegetarian, packed with veggies and low carb.
This serves one lucky person but can easily be doubled.
Ghee or butter for pan and frying eggs
1/2 a medium sweet onion, chopped
1 small zucchini OR green bell pepper, diced
1 cup fresh spinach or spinach/kale blend, packed
2-3 eggs
1/2 avocado

- Preheat cooking fat in large skillet while you prep your veggies.
- Add onion to pan, stirring for about two minutes. Add zucchini or bell pepper and stir until softened.
- In a preheated small cast iron, begin frying eggs to your liking.
- Add spinach to large skillet with other veggies while your eggs fry. Prep the avocado.
- Season with salt and spices (or siracha) and devour your awesome breakfast! You earned it.
