Chocolate dipped peppermint brownies
These were fabulous. I had two when they finished, one for dessert and another this morning *food comma initiates*. Unfortunately, my number one fan (Dad) didn't try, because he is opposed to two lovely flavors, chipotle ("it tastes like chewing tobacco") and peppermint.
The batter was simple, with almond flour as the base. They took just ten minutes to throw together with her help, 15 minutes to bake (they didn't hold together well at this point, but don't fear) and thirty minutes to freeze. Then came the best part, dipping them in their dark chocolate coating (no, not technically sugar free, shoot me). After chilling, we dug in. I give this recipe five out of five.
My first cauliflower crust pizza
It was an adventure. However, it was pretty simple to pull the crust together. It wasn't sticking at all, so I threw in about a two tablespoons of ground flax, and that helped it along. After the crust baked for four minutes, Meghan and I threw on our favorite toppings. For me, that was a little parm, goat cheese, spinach and salami and for her it was a margarita pizza plus spinach.
The entire process was about 25 minutes total.
The pizza, when complete, was pretty good. There was no cauliflower flavor and the toppings added lots of goodness, but the crust was fragile. I will definitely try this again, maybe using an egg plus an egg white to help it hold together.
Attempt three at coconut milk ice cream
Yep, attempt THREE. My first was the best and the second and third were equally disappointing. At this point, I'm just doing it because I'm irritated. I'm not expecting copycat Ben and Jerry's, but COME ON. All three attempts have resulted in a very icey, crunchy texture. I will probably continue experimenting with this.
